Ground Beef and Barley

This is a very simple, but delicious dinner option. To me it tastes like beef stroganoff!
I usually try to serve a whole grain with our dinners, and barley is a great alternative to the usual brown rice, whole wheat pasta, quinoa, etc. Barley is actually higher in fiber, and is also high vitamins, minerals, and antioxidants.
Grass-fed beef has less total fat, more heart-healthy omega-3 fatty acids, and antioxidant vitamins, such as vitamin E than conventional beef.
Recipe:
1 cup pearled barley
1-2 Tbsp olive oil
8 oz mushrooms, sliced
1/2 onion, diced
2 garlic cloves, minced
Salt and pepper to taste
1 Tbsp balsamic vinegar
Instructions:
-Cook barley according to package directions. (For extra flavor, use broth instead of water)
-Heat olive oil in skillet over medium heat. Add onions, mushrooms, salt and pepper. Saute for several minutes, stirring occassionally, until onions and mushrooms are nice and golden brown. Add garlic and saute for another minute or two. Remove from pan and set aside.
-In the same skillet, brown the ground beef, and drain.
-Return the ground beef to pan, and stir in the barley, and onion/mushroom/garlic mixture. Mix in the balsamic vinegar.
-Serve with your favorite vegetable, or side salad.
